BBQ Chickpea Salad from mj’s cafe – spiced chickpeas, avocado, roasted corn, carrots, tomatoes, sprouts, toasted pumpkin seeds, pickled red onion, vegan ranch, over jalapeño lime slaw

A few weeks ago a friend hipped me to White Star Market.

Part of the Baton Rouge mid-city revitalization, this food court, (they call it a food hall), contains an eclectic mix of gourmet vendors.

I fully intend to taste my way through all the vendors, but so far, I keep returning for mj’s cafe, a plant-based eating establishment.

The first time I went was a Sunday afternoon after worship. The food court was packed with folks ordering, eating and listening to live folk music.

I’m not the folk music type, the wait was so long, and my family was impatient, so I left with a snack – a buttery cinnamon roll the size of a cantaloupe from Reve Coffee Lab – BTR. That thang was so good it was bad.

My second trip I made it to MJ’s Cafe and selected their salad of the week. I’m bummed I didn’t snap a picture or write down what was in it but I clearly recall thinking as I ate, it was the best salad I’d had in a long while.

Today, I selected a salad from their menu – the BBQ Chickpea Salad

spiced chickpeas, avocado, roasted corn, carrots, tomatoes, sprouts, toasted pumpkin seeds, pickled red onion, vegan ranch, over jalapeño lime slaw

Fabulous!
Before mixing it up and adding dressing, I tasted each salad component alone. Everything was super fresh and flavorful, and when mixed the ingredients complimented each other beautifully.

I really like the crisp and heartiness of this salad from the slaw base, and how the sweet of the corn, spice of the chickpeas and cool from the avocado play together.

The salad was served with two dressings on the side – a vinaigrette and a ranch. It was so good, I didn’t need/use the ranch.

Beyond enjoying the delish taste – I felt I was doing something good for my body with this meal.  That is what good eating is about.

I’m gonna try to recreate this at home and plan to go back to MJ’s Cafe for more on their menu.

What good-to-you, good-for-you meal have you had lately?
