Accountability is Sweet

These daily posts show everything I eat and drink.  This transparency brings accountability to me as I ‘cleanse’ from refined sugar. I hope it also provides a few simple meatless meal and snack ideas for you.

Today was munchy.

The day’s schedule involved the Baton Rouge Junior League‘s Inaugural Women’s Leadership Conference. Upon arrival I was informed that the conference was semi-cancelled. COVID-19 advisories led them to nix all the breakout sessions and restrict activities to the luncheon with keynote speaker Laila Ali.

Laila is beautiful, sassy and accomplished. She’s a world-class athlete, fitness and wellness expert, TV host, cooking enthusiast, cookbook author, founder of the Laila Ali Lifestyle brand, wife and mother of two. Her passion for building confidence in women, health and wellness, and inspiring others to be the best version of themselves through lifestyle choices.

She seems fun to hang with and I enjoyed her sharing. Three statements that stuck with me:

“When you get an idea. Don’t talk yourself out of it.”  I do this more often than I care to admit. Often we are our own greatest limiting factors.

“Take steps towards your goals everyday.” Yup.

And when the conversation shifted to address whether she would come out of retirement to box again, she addressed naysayers who suggest she stick to work in the kitchen with: “I will bake muffins AND knock people out”.  I don’t doubt it!

Here’s the day’s eating.

My first meal was at the luncheon.

Sorry I forgot to snap a picture of the food I ate. {It was not as drawing as the chocolate cake – that I did not touch. Didn’t want it. JAB-JAB-PUNCH to that sugar craving monster!!!}

I did however keep eating other things… all day.

Heading to the produce market tomorrow for more fruit and veggies to munch on.

How’s your eating during this COVID craze?  Let’s try to keep it healthy.
