Meatloaf is a comfort food classic. Pair it with simple potatoes and steamed vegetables and you have a nostalgic dinner that feels like home.  It’s easy, cost effective and the leftovers make a yummy/hearty sandwich.  

The drawback: Meatloaf takes about an hour to bake.  Ain’t nobody got time for that!  (I couldn’t resist!) 

The solution: Meatloaf Muffins!   Instead of one loaf, divide and bake your favorite meatloaf recipe in a muffin tin.  It will bake in less than half the time – plus you’ll have built in portion control. Use a meat thermometer and cook until 160° F internal temperature to determine the exact time for your meatloaf muffins.  (These meatloaf muffins took ~25 mins in a large silicon muffin pan.)
