These daily posts show everything I eat and drink (excluding all the water). This transparency brings accountability to me as I ‘cleanse’ from refined sugar. I hope it also provides a few simple meatless meal ideas for you.
64 degrees. Partly sunny. Beautifully breezy AND the children were back in school. GLORY!
This morning’s smoothie contained 1 1/2 medium sized frozen bananas, 2 dates, a scoop of protein powder, ice, unsweetened almond milk and cinnamon. (Besides being delicious – cinnamon helps regulate blood sugar.)
Two new-to-me items made today’s eats.
1. The Olga Apple. These babies are super sweet and moderately firm. I enjoyed one with a dollop of salted almond butter.
2. Riced Cauliflower.
I picked this up over the weekend and planned to use instead of rice with a stir fry later in the week, but the expiration date moved me to dig into them today in a lasagna-ish casserole.
This dish is zucchini, red onion, and bella mushrooms smothered down on the stove top with fire roasted tomatoes, basil, Italian seasoning, minced garlic, salt and pepper. I layered a casserole dish with half the bag of raw riced cauliflower, the smothered veggies and topped with fresh Mozzarella and a shaving of Parmesan and Toscano cheeses. Baked 30 minutes at 350 till bubbly.
Served with pieces of soft pretzel (from yesterday) and mixed greens with julienned carrot, red onion and red grapes with a homemade vinaigrette. Super yummy.
